From which quranic or hadith interpretation can we say that eating crab is halal?

All kinds of sea food are permissible except for that which is specifically prohibited by a scriptural text or is proved to be harmful for health. This is based on the generality of the words of the Prophet (peace and blessings be upon him) about the sea: “Its water is pure and its dead animals are lawful to eat.”
